Pumpkin-Coconut Bread

Ingredients

• 2 eggs beaten
• 1 c sugar
• 34 c vegetable oil
• 1 12 c all-purpose flour
• 1 tsp baking powder
• 1 tsp baking soda
• 12 tsp salt
• 1 3 12 oz pkg coconut cream instant pudding mix
• 12 tsp ground nutmeg
• 12 tsp ground ginger
• 12 tsp ground cinnamon
• 1 c canned or cooked mashed pumpkin
• 12 c chopped pecans optional

Directions

1. Combine first 3 ingredients in a large mixing bowl beat at medium speed of an electric mixer until blended
2. Combine flour and next 7 ingredients in a medium bowl add to sugar mixture alternately with pumpkin beginning and ending with flour mixture Mix after each addition
3. Stir in pecans if desired
