Pumpkin-Pecan Bread Low-Fat
Ingredients
- 1 34 c flour
- 1 tsp baking powder
- 14 tsp salt
- 12 tsp baking soda
- 12 c sugar
- 34 tsp cinnamon
- 12 tsp nutmeg
- 34 c pumpkin puree
- 13 c skim milk
- 13 c oil
- 12 c egg substitute
- 12 c chopped pecans
Directions
- Mix flour baking powder baking soda salt sugar cinnamon and nutmeg in a large bowl
- Make well in center
- Combine pumpkin milk oil egg substitute and pecans in a medium bowl
- Mix well Pour into well in flour mixture stir until just moistened
- Spoon into 4 x 8-inch loaf pan sprayed with nonstick oil
- Bake at 350 for 45 to 55 minutes
- Cool and remove from pan
- Sprinkle with confectioners sugar if desired or serve with cream cheese
