Pumpkin Cake Roll

Ingredients

  • 3 eggs
  • 1 c sugar
  • 23 c pumpkin
  • 1 tsp lemon juice
  • 34 c flour
  • 1 tsp baking powder
  • 2 tsp cinnamon
  • 1 tsp ginger
  • 12 tsp nutmeg
  • 12 tsp salt
  • powdered sugar for sprinkling

Directions

  1. Using electric mixer beat eggs on high for 5 minutes Gradually beat in sugar
  2. Stir in pumpkin and lemon juice
  3. Sift flour baking powder cinnamon ginger nutmeg and salt
  4. Fold into pumpkin
  5. Spread in well-greased and floured 15 x 10 x 1 12 pan cake roll pan
  6. Bake at 375 for 15 minutes
  7. Turn out on towel sprinkled with powdered sugar
  8. Starting at narrow end roll towel and cake together cool
  9. Unroll and spread with filling
