Pumpkin Cookies

Ingredients

• 2 c shortening
• 2 c sugar
• 2 c pumpkin
• 2 eggs
• 2 tsp vanilla
• 4 c flour
• 2 tsp baking powder
• 1 tsp baking soda
• 1 tsp salt
• 2 tsp cinnamon
• 1 tsp nutmeg
• 12 tsp allspice
• 2 c raisins optional
• 1 c nuts optional

Directions

1. Cream together the shortening and 2 cups of sugar
2. Add pumpkin eggs and vanilla
3. Sift together the flour baking powder baking soda salt cinnamon nutmeg and allspice
4. Add to creamed mixture
5. Combine ingredients
6. Drop by spoonfuls onto greased baking sheet approximately 1 inch apart
7. Bake at 350 for 13 to 15 minutes
8. Frost with Buttercream Frosting
