Pumpkin Date Bread

Ingredients
- 4 beaten eggs
- 3 c sugar
- 1 16 oz can pumpkin
- 1 c oil
- 13 c water
- 12 tsp vanilla
- 3 12 c all-purpose flour
- 1 12 tsp ground cinnamon
- 1 tsp salt
- 1 tsp baking soda
- 8 oz dates or raisins
- 1 12 c pecans
Directions
- Combine eggs and sugar in a large mixing bowlStir in pumpkin oil water and vanilla until blended
- Stir together flour cinnamon salt and baking soda
- Add pumpkin mixture stirring until just combined
- Fold in dates and nuts
- Pour mixture into 4 greased 7 x 3 x 2-inch pans or 2 9 x 5 x 3-inch pans
- Bake in a 350 oven about 55 minutes for small loaves 65 minutes for large loaves
