Pumpkin Ice Cream Squares

Ingredients

• 1 12 c graham cracker crumbs
• 14 c sugar
• 14 c melted butter
• 1 16 oz can pumpkin
• whipped cream and pecans optional
• 12 c brown sugar
• 12 tsp salt
• 1 tsp cinnamon
• 14 tsp ginger
• 18 tsp cloves
• 1 qt vanilla ice cream softened

Directions

1. Mix crumbs with butter and sugar
2. Press into the bottom of a 9-inch square pan
3. Combine pumpkin with sugar salt and spices Fold in ice cream
4. Pour into crumb-lined pan
5. Cover
6. Freeze until firm
7. Cut into squares about 20 minutes before serving Top with whipped cream and pecans
8. Makes 9 3-inch squares
