Pumpkin Pecan Bread
Ingredients
- 3 12 c flour
- 2 tsp baking soda
- 1 12 tsp salt
- 1 12 tsp cinnamon
- 1 tsp nutmeg
- 1 c sugar
- 1 c oil
- 4 eggs
- 23 c water
- 2 c canned pumpkin
- 1 c chopped pecans
Directions
- Preheat oven to 350
- Sift together flour soda salt and cinnamon and nutmeg
- Add sugar and stir to mix thoroughly
- Make a well in center of dry ingredients and add all at once the oil eggs and water and pumpkin
- Mix well and add nuts
- Pour batter into 3 8 x 4-inch loaf pans
- Fill only half full
- Bake for 1 hour or until wooden toothpick comes out clean
- One loaf equals 16 slices each slice contains 85 calories
