Pumpkin Pecan Bread

Ingredients

  • 3 12 c flour
  • 2 tsp baking soda
  • 1 12 tsp salt
  • 1 12 tsp cinnamon
  • 1 tsp nutmeg
  • 1 c sugar
  • 1 c oil
  • 4 eggs
  • 23 c water
  • 2 c canned pumpkin
  • 1 c chopped pecans

Directions

  1. Preheat oven to 350
  2. Sift together flour soda salt and cinnamon and nutmeg
  3. Add sugar and stir to mix thoroughly
  4. Make a well in center of dry ingredients and add all at once the oil eggs and water and pumpkin
  5. Mix well and add nuts
  6. Pour batter into 3 8 x 4-inch loaf pans
  7. Fill only half full
  8. Bake for 1 hour or until wooden toothpick comes out clean
  9. One loaf equals 16 slices each slice contains 85 calories
