Pumpkin Pecan Cake

Ingredients

  • 2/3 c. chopped pecans
  • 3 1/3 c. flour
  • 1/2 tsp. baking powder
  • 1 1/2 tsp. salt
  • 2 tsp. baking soda
  • 1 tsp. cinnamon
  • 1 tsp. ground cloves
  • 2/3 c. shortening
  • 2 2/3 c. sugar
  • 4 eggs
  • 2 c. pumpkin
  • 2/3 c. water

Directions

  1. Grease and flour a 12-inch tube pan.
  2. Mix together flour, baking powder, salt, baking soda, cinnamon and cloves.
  3. Cream together sugar and shortening; add eggs and mix well.
  4. Add chopped pecans to dry ingredients, then add creamed mixture, folding together with pumpkin and alternating with water.
  5. Bake at 350° for 1 hour or until toothpick inserted in center comes out clean.
