Pumpkin Pie Or CustardDiabetic

Ingredients

  • 2 eggs
  • 1 envelope D-Zerta vanilla or butterscotch pudding
  • 14 c evaporated skim milk
  • 1 c skim milk
  • 2 c 1 No 303 can cooked pumpkin
  • 3 tsp pumpkin pie spice
  • 12 tsp salt
  • 12 tsp vanilla
  • 12 tsp sugar substitute

Directions

  1. Beat eggs until frothy
  2. Stir pudding mix and evaporated milk to smooth paste
  3. Add this and all other ingredients to eggs and stir until well blended
