Pumpkin Roll
Ingredients
- 3 eggs
- 1 c sugar
- 23 c pumpkin
- 34 c flour
- 1 tsp ginger
- 1 tsp baking powder
- 12 tsp nutmeg
- 12 tsp salt
- 2 tsp cinnamon
- 1 c chopped pecans
- confectioners sugar to dust roll
- 2 3 oz pkg cream cheese
- 4 Tbsp butter
- 12 tsp vanilla
- 1 c powdered sugar
Directions
- Beat eggs on high speed of mixer for 5 minutes
- Gradually beat in sugar
- Stir in pumpkin stir together flour baking powder cinnamon ginger nutmeg and salt
- Fold into pumpkin and spread on a well-greased and floured cookie sheet
- Top with nuts bake at 375
- for 15 minutes
- Turn out on towel dusted with powdered sugar
- Starting at one end roll towel and cake
- Cool in freezer and then unroll
