Pumpkin Roll
Ingredients
- 3 eggs
- 1 c sugar
- 34 c pumpkin
- 34 c flour
- 2 tsp cinnamon
- 1 tsp ginger
- 12 tsp nutmeg
- 1 tsp baking powder
- 12 tsp salt
- 1 c nuts
Directions
- Beat eggs at high speed for 5 minutes
- Gradually add sugar in small amounts
- Beat until thick
- Fold in pumpkin and dry ingredients
- Mix well
- Grease a 15 x 10-inch pan and line with waxed paper
- Pour batter into pan
- Sprinkle with chopped nuts Bake in a preheated 375 oven for 15 minutes
- Turn out on a clean towel which is sprinkled with powdered sugar
- Roll as a jelly roll and let cool
- Unroll and spread with filling
- Then re-roll chill and keep refrigerated
