Queen Of Hearts Tarts

Ingredients

  • 12 c butter
  • 13 c sugar
  • 1 egg yolk
  • 12 tsp vanilla
  • 1 c flour
  • 12 tsp salt

Directions

  1. Cream together thoroughly the butter and sugar
  2. Stir in the egg yolk and vanilla
  3. Sift together the flour and salt and add to creamed mixture
  4. Mix well
  5. Shape into 3 dozen small balls and dip each into unbeaten egg white
  6. Roll in chopped nuts pecans or peanuts and place 2 inches apart on lightly greased cookie sheet Do not flatten balls
  7. Bake at 300 for 30 minutes
  8. After baking 10 minutes remove pan from oven and with a thimble make a dent into each cookie
  9. Return pan to oven
  10. Work as quickly as possible and if the thimble sticks dip into cold water
  11. When cookies are done remove to cooling rack and fill each dent while warm with jam or marmalade
  12. A tart jam is best plum apricot or pineapple
