Ingredients

  • 1 medium onion
  • 12 c celery
  • 1 clove garlic minced
  • 1 10 oz pkg frozen cut okra thawed
  • 14 lb andouille or other smoked sausage sliced
  • 2 whole boneless skinless chicken breasts cut into cubes
  • 1 small green pepper cut into strips
  • 1 8 oz can tomato sauce
  • 1 14 12 oz can Cajun-style stewed tomatoes
  • 2 tsp Creole seasoning
  • 1 12 c Minute premium long grain rice uncooked
