Quick English Currant Bread
Ingredients
- 5 level c flour
- 2 c light brown sugar
- 12 tsp salt
- 12 lb raisins
- 12 lb currants
- 34 c candied mixed fruit
- 2 12 c buttermilk
- 12 lb margarine
- 1 tsp nutmeg
- 1 tsp cinnamon
- 1 heaping tsp baking powder
- 1 level tsp baking soda
- 2 eggs
Directions
- Cream sugar and margarine
- Add eggs
- Combine flour salt spices baking powder and baking soda
- Add raisins currants and candied fruit
- Add buttermilk alternately with flour mixture Make as moist as fruit cake
- Pour into 2 loaf pans greased and lined with waxed paper
- Bake in a 350 oven for 12 hour then at 300 for last half hour
- Cool on rack
- Wrap in foil and store in refrigerator
