Quick Lemon BreadJennifer Vail

Ingredients
- 1 c sugar
- 13 c butter or margarine melted
- 1 tsp lemon extract
- 14 c fresh lemon juice
- 2 eggs
- 1 12 c flour
- 1 tsp baking powder
- 1 tsp salt
- 12 c milk
- grated rind or 1 large lemon
- 12 c chopped pecans
Directions
- Combine sugar butter extract and juice
- Beat in eggs one at a time until smooth
- In a separate bowl mix flour baking powder and salt
- Stir in the wet ingredients alternately with the milk
- Add the lemon rind and pecans
- Pour batter into a greased 4 12 x 8 12-inch loaf pan
- Bake for about 1 hour or until a toothpick comes out clean
