Quick Lemon Pie

Ingredients

  • 1 8-inch baked pastry shell
  • 12 c lemon juice
  • 1 tsp grated lemon rind
  • 1 15 oz can sweetened condensed milk
  • 2 eggs separated
  • 14 tsp cream of tartar
  • 4 Tbsp sugar

Directions

  1. Combine lemon juice and rind
  2. Blend in condensed milk
  3. Beat egg yolks slightly blend into mixture
  4. Pour into cooled pastry shell
  5. Beat egg whites until foamy add cream of tartar
  6. Add sugar one tablespoon at a time beating well after each Continue beating until very stiff peaks form
  7. Pile lightly on pie filling
  8. Brown in oven 350 for 10 minutes
  9. Serves 6
