Quick Vegetable Bread
Ingredients
- 1 c about 2 oz untrimmed spinach leaves 12 c chopped
- 1 carrot about 12 c grated
- 1 scallion
- 2 13 c flour
- 4 Tbsp grated Parmesan cheese
- 2 Tbsp sugar
- 1 Tbsp baking powder
- 34 tsp salt
- 34 tsp dried thyme
- 18 tsp nutmeg
- 1 c milk
- 14 c oil
- 1 egg
- 2 Tbsp sliced pimento
Directions
- Heat oven to 350
- Butter an 8 x 5-inch loaf pan
- Chop the spinach
- Grate the carrot
- Chop the scallion
- In a large bowl combine flour 2 tablespoons Parmesan sugar baking powder salt thyme and nutmeg
- In a separate bowl combine the milk oil and egg
- Stir the milk mixture chopped vegetables and pimento into the flour mixture until all ingredients are just moistened
- Spoon batter into the prepared pan
- Sprinkle with the remaining 2 tablespoons Parmesan
- Bake until a toothpick stuck into the center comes out clean 55 to 60 minutes
- Cool 10 minutes Remove from the pan cool completely
