Quick Vichyssoise

Ingredients
- 12 c water
- 2 Tbsp snipped parsley
- 2 chicken bouillon cubes
- 1 c light cream
- packaged instant mashed potatoes enough for 4 servings
- 1 4 oz pkg whipped cream cheese with onion
- snipped chives
Directions
- Combine water snipped parsley and the chicken bouillon cubes in a saucepan
- Cover and bring to a boil stirring until the bouillon cubes dissolve
- Remove from heat add light cream
- Stir in instant mashed potatoes
- Cool at room temperature for 15 minutes
