Quick Zucchini Cake
Ingredients
- 1 box yellow cake mix
- 4 eggs
- 12 c vegetable oil
- 1 Tbsp vanilla extract
- 1 tsp cinnamon optional
- 2 c grated unpeeled zucchini
- 12 c raisins
- 12 c chopped nuts
Directions
- In a mixing bowl heat cake mix eggs oil vanilla and cinnamon for 6 to 7 minutes
- Fold in zucchini raisins and nuts Spoon into a greased and floured 10-inch fluted tube pan
- Bake at 350 for 40 to 50 minutes or until done
- Sprinkle with confectioners sugar if you like
