Raisin And Nut Bran Muffins
Ingredients
- 1 12 c bran
- 12 c milk
- 12 c all purpose flour
- 12 c sugar
- 1 egg beaten
- 2 Tbsp butter melted
- 1 c chopped pecans
- 12 c light or dark raisins
Directions
- Preheat oven to 400 degrees
- Grease a 2 inch muffin tin Combine bran and milk in a bowl and let sit for 5 minutes
- Then mash with the back of spoon
- Sift together the flour and sugar and add to bran
- Add the beaten egg and the melted butter and stir until well blended Do not beat
- Stir in the nuts and raisins Divide batter amount the muffin cups
- Bake 15 to 20 minutes Makes 12 muffins
