Raisin Bread Pudding

Ingredients

  • 2 12 c skim milk
  • 6 1 oz slices raisin bread cubed
  • 2 eggs slightly beaten
  • 2 Tbsp honey
  • 1 tsp vanilla extract
  • 14 tsp salt
  • 14 tsp ground cinnamon
  • 18 tsp ground nutmeg

Directions

  1. Place milk in a large saucepan heat until warm do not boil Remove form heat
  2. Add bread and next 6 ingredients stir well Spoon mixture evenly into 6 4 ounce ramekins or custard cups coated with cooking spray
  3. Place ramekins in a 13 x 9 x 2-inch baking dish add hot water to a depth of 1 inch
  4. Bake at 350 for 20 minutes shield with aluminum foil and bake an additional 10 minutes or until a knife inserted in center comes out clean Remove ramekins from water Serve pudding warm or chilled
