Raisin Pie
Ingredients
- 2 23 c raisins
- 1 c granulated sugar
- 1 large beaten egg
- 2 rounded Tbsp flour
- 2 rounded Tbsp cornstarch
- 1 Tbsp vinegar apple cider
- 1 tsp vanilla
- 1 tsp cinnamon
- pastry for 2 9-inch crusts
Directions
- Put raisins in large saucepan
- Cover with water plus that amount of water also
- Simmer until raisins are plump
- While raisins are cooking mix together the sugar egg flour and cornstarch
- Pour small amount of hot liquid into the sugar-egg mixture then gently pour all this into raisins
- Stir constantly it will thicken quickly
- Remove from heat
- Let cool while fitting crust in pie pan
