Raisin Zucchini Bread

Ingredients

• 2 medium zucchini
• 2 c sugar
• 3 eggs beaten
• 3 c self-rising flour
• 1 c oil
• 1 Tbsp vanilla
• 1 c raisins
• 1 c chopped nuts
• 1 Tbsp cinnamon

Directions

1. Shred zucchini
2. Set aside
3. Cream sugar and oil
4. Add eggs zucchini and vanilla Mix flour raisins nuts and cinnamon
5. Add to above
6. Pour into 2 greased loaf pans
7. Bake 350 for 1 hour
