Raw Apple Muffins

Ingredients

  • 4 c diced Granny Smith apples peeled or unpeeled
  • 2 tsp baking soda
  • 2 tsp cinnamon
  • 14 c sugar
  • 12 packets Sugar Twin Plus
  • 1 tsp salt
  • 1 c raisins
  • 12 c black walnuts
  • 12 c walnuts in large pieces
  • 2 eggs lightly beaten
  • 12 c oil
  • 2 tsp vanilla
  • 2 c all-purpose flour sifted

Directions

  1. Preheat oven to 320
  2. Grease muffin tins put three mixing bowls on counter
  3. Cover raisins with water and boil 10 minutes drain
  4. Mix apples sugar and Sugar Twin Plus in one bowl and set aside
  5. Put the eggs oil and vanilla in second bowl and stir to blend well
  6. In the third bowl put the flour baking soda cinnamon and salt stir the mixture with a fork until blended
  7. Stir the egg mixture into apple mixture and mix thoroughly
  8. Sprinkle the flour mixture over the apple mixture and mix well
  9. Sprinkle raisins and walnuts over batter and mix well until evenly distributed
  10. Bake for 25 minutes or until toothpick comes out clean
  11. Makes 16 to 18 muffins
