Red-Skinned Mashed Potatoes

Ingredients
- 12 red-skinned potatoes
- 1 tsp soybean oil
- pinch of salt
- 14 stick butter
- 12 c heavy cream
- pinch of black pepper
- 1 tsp sour cream
Directions
- Add salt and soybean oil to 1 quart water
- Bring to a boil and add potatoes until fork-tender
- Remove potatoes and add butter heavy cream pepper and sour cream
- Mash
- Serves 4
