Red Beans

Ingredients
- 2 c red beans
- 12 lb salt pork
- 2 onions chopped
- 1 Tbsp shortening
- 1 Tbsp flour
Directions
- Soak beans overnight Brown salt pork in shortening Brown onions Add flour browning to form a roux
- Add beans and enough water to cover well Simmer 2 hours
- Serve with rice Serves 8
