Red Beans And Sausage With Rice

Ingredients

  • 1 small ham hock or 1 slice ham no-fat
  • 1 lb dried red kidney beans
  • 2 c chopped onion
  • 1 12 c celery
  • 1 12 c green pepper
  • 12 c green onions
  • 1 c ketchup or 8 oz tomato sauce
  • 1 tsp garlic powder
  • 1 tsp oregano whole
  • 1 tsp thyme whole
  • 12 tsp pepper white or black
  • 12 tsp red pepper
  • 2 bay leaves
  • 2 to 3 dashes hot sauce
  • 1 lb lite smoked sausage or Polish kielbasa sausage

Directions

  1. Wash beans soak at least 8 hours drain
  2. Cover beans with water
  3. Add ham boil cover and simmer 45 minutes
  4. Add ingredients onion through hot sauce
  5. Cover and cook 1 hour
  6. Stir occasionally
  7. Add sausage
  8. Cook uncovered 45 minutes
  9. Serve over rice
