Red Cherry Pie

Ingredients
- 23 c juice from cherries
- 34 c sugar
- 1 12 Tbsp quick cooking tapioca
- 2 12 c canned pitted red cherries drained
- 3 or 4 drops almond extract
- few drops red food coloring
- 1 Tbsp butter or margarine
- pastry for 9-inch lattice top pie
Directions
- Combine the first 6 ingredients and a dash of salt let stand 20 minutes
- Line a 9-inch plate with pastry
- Fill dot with butter
- Adjust lattice crust crimp edge high
- Bake in very hot oven 450 for 15 minutes
- Reduce heat to 375 and bake about 45 minutes more
