Ingredients

  • 23 c juice from cherries
  • 34 c sugar
  • 1 12 Tbsp quick cooking tapioca
  • 2 12 c canned pitted red cherries drained
  • 3 or 4 drops almond extract
  • few drops red food coloring
  • 1 Tbsp butter or margarine
  • pastry for 9-inch lattice top pie

Directions

  1. Combine the first 6 ingredients and a dash of salt let stand 20 minutes
  2. Line a 9-inch plate with pastry
  3. Fill dot with butter
  4. Adjust lattice crust crimp edge high
  5. Bake in very hot oven 450 for 15 minutes
  6. Reduce heat to 375 and bake about 45 minutes more
