Red Tomato Preserves

Ingredients

  • 5 lb 11 c quartered ripe red tomatoes
  • 4 lb sugar
  • 2 lemons sliced thin

Directions

  1. Scald peel and quarter tomatoes
  2. Add sugar and let stand overnight
  3. Drain off juice and boil it rapidly until it spins a thread when dropped from spoon
  4. Add tomatoes and lemons and boil until thick and clear
  5. Add a few drops of red food coloring Pour into hot jars and seal
