Reuben Casserole

Ingredients

  • 4 slices rye bread
  • 1 Tbsp Dijon mustard
  • 1 can corned beef
  • 1 lb sauerkraut
  • 14 c water
  • 3 Tbsp pickle relish
  • 1 can condensed tomato soup
  • 4 slices Swiss cheese cut in pieces

Directions

  1. Grease square baking dish
  2. Spread mustard on one side of each slice of rye bread
  3. Cut bread in 12-inch cubes
  4. Scatter over bottom of dish
  5. Crumble corned beef over bread
  6. In large bowl mix sauerkraut soup water and relish until blended
  7. Spoon over corned beef
  8. Cover with microwave paper
  9. Microwave on High about 8 minutes turning twice
  10. Place cheese on top and warm until cheese melts
  11. Let stand 5 minutes then serve
