Ingredients

  • 1 stick butter or margarine
  • 12 c sugar
  • 2 to 3 eggs
  • pinch of salt
  • grated zest of 1 lemon
  • 1 12 c all-purpose flour
  • 2 tsp baking powder
  • 1 to 4 Tbsp milk
  • 12 stalks rhubarb 2 12 lb
  • 14 c sugar

Directions

  1. Combine butter 12 cup sugar eggs and salt
  2. Gradually beat until frothy
  3. Add lemon zest
  4. Sift flour and baking powder fold into egg mixture alternately with milk
  5. Batter drops heavily from the spoon
