Rhubarb Cake

Ingredients

  • 12 c butter
  • 1 12 c brown sugar packed
  • 1 egg
  • 1 tsp vanilla
  • 1 c buttermilk
  • 1 tsp soda
  • 2 c flour
  • 1 12 c rhubarb coarsely chopped

Directions

  1. Beat butter sugar egg and vanilla until creamy
  2. Stir soda into buttermilk add to sugar mixture alternating with flour Stir in rhubarb
  3. Spread in greased and floured 9 x 13-inch pan In small bowl combine 12 cup sugar 1 teaspoon cinnamon and 1 tablespoon melted butter
  4. Sprinkle over batter
  5. Bake at 350 for 40 minutes
