Rhubarb Cobbler With Oat Dumplings

Ingredients

  • 34 c sugar
  • 1 c water
  • 1 lb fresh or frozen rhubarb sliced into 1-inch pieces 4 c
  • 2 Tbsp cornstarch
  • 12 c orange juice

Directions

  1. In a small saucepan stir together the 34 cup sugar and the cornstarch
  2. Stir in water and orange juice
  3. Cook and stir over medium-high heat until the mixture is thickened and bubbly
  4. Add the fresh or frozen rhubarb pieces cook and stir until the mixture returns to boiling
  5. Remove from the heat
  6. Cover the mixture to keep warm
