Rhubarb Cobbler With Oat Dumplings
Ingredients
- 34 c sugar
- 1 c water
- 1 lb fresh or frozen rhubarb sliced into 1-inch pieces 4 c
- 2 Tbsp cornstarch
- 12 c orange juice
Directions
- In a small saucepan stir together the 34 cup sugar and the cornstarch
- Stir in water and orange juice
- Cook and stir over medium-high heat until the mixture is thickened and bubbly
- Add the fresh or frozen rhubarb pieces cook and stir until the mixture returns to boiling
- Remove from the heat
- Cover the mixture to keep warm
