Rhubarb Cream Pie

Ingredients

  • 3 c cut rhubarb
  • 1 12 c sugar
  • 3 Tbsp flour
  • 12 tsp nutmeg
  • 1 Tbsp butter
  • 2 beaten eggs
  • 1 recipe plain pastry for 9-inch double crust

Directions

  1. Blend sugar flour nutmeg and butter
  2. Add beaten eggs beat smooth
  3. Pour over rhubarb in a 9-inch pastry-lined pie pan
  4. Top with pastry cut in fancy shapes
  5. Bake in hot oven 450 for 10 minutes then in moderate oven 350 for about 30 minutes
