Rhubarb Cream Pie
Ingredients
- 3 c cut rhubarb
- 1 12 c sugar
- 3 Tbsp flour
- 12 tsp nutmeg
- 1 Tbsp butter
- 2 beaten eggs
- 1 recipe plain pastry for 9-inch double crust
Directions
- Blend sugar flour nutmeg and butter
- Add beaten eggs beat smooth
- Pour over rhubarb in a 9-inch pastry-lined pie pan
- Top with pastry cut in fancy shapes
- Bake in hot oven 450 for 10 minutes then in moderate oven 350 for about 30 minutes
