Rhubarb Crunch

Ingredients

  • 1 c flour
  • 1 c brown sugar
  • 1 tsp cinnamon
  • 34 c oats
  • 12 c melted margarine or butter
  • diced rhubarb
  • 1 c sugar
  • 2 Tbsp cornstarch
  • 1 c water
  • 1 tsp vanilla

Directions

  1. Mix the first 5 ingredients until crumbly press half of the crumb mixture into greased baking dish
  2. Cover with rhubarb Combine sugar cornstarch water and vanilla
  3. Cook until thickened and clear
  4. Pour over rhubarb
  5. Top with remaining crumbs
  6. Bake 1 hour at 350
