Rhubarb Custard Pie

Ingredients

  • 3 c rhubarb cut in 12-inch pieces
  • 2 c sugar
  • 2 Tbsp flour
  • 3 eggs separated
  • 1 c milk
  • 1 unbaked 9-inch pie shell
  • 2 Tbsp sugar

Directions

  1. Beat egg yolks
  2. Add sugar flour and milk then add rhubarb Pour into unbaked pie shell that has been sprinkled with 1 tablespoon flour
  3. Bake in a 350 oven for 34 hour or until custard is set
