Rhubarb Custard Pie

Ingredients

  • 3 c diced rhubarb
  • 1 12 c sugar
  • 3 Tbsp flour
  • few grains salt
  • 12 tsp nutmeg
  • 2 eggs
  • 2 Tbsp milk
  • 1 Tbsp butter

Directions

  1. Wash and dice unpeeled rhubarb and mix with sugar flour salt and nutmeg
  2. Beat eggs slightly add milk
  3. Combine with rhubarb mixture
  4. Place in pie shell and dot with butter
  5. Bake at 400 for 50 minutes
  6. Make one single crust 9-inch pie pan
