Rhubarb Pie

Ingredients

  • pastry for 2 pies
  • 1 c sugar
  • 3 Tbsp flour
  • 1 egg
  • 2 c chopped rhubarb

Directions

  1. Line an 8-inch pie pan with pastry
  2. Combine sugar and flour add to beaten egg
  3. Stir in rhubarb
  4. Pour into pastry
  5. Place top crust over filling
  6. Cut slits for escape of steam
  7. Seal and flute edges
  8. Bake at 400 for 35 minutes
