Rhubarb Pie
Ingredients
- 3 c rhubarb cut in 1-inch pieces
- 1 egg
- 12 tsp lemon juice
- 1 c sugar
- 2 Tbsp flour
- 2 Tbsp oleo
Directions
- Wash and cut rhubarb into small 1-inch pieces
- Beat egg add lemon juice sugar and flour
- Mix together and pour over chopped rhubarb
- Stir until well coated
- Pour into unbaked 9-inch pie crust
- Dot with oleo
- Cover with top crust
- Sprinkle with 1 teaspoon sugar and prick holes with fork
- Bake at 425 for 10 minutes and then at 350 for 30 minutes or until golden brown
