Rhubarb Pie

Ingredients

  • 3 c rhubarb cut in 1-inch pieces
  • 1 egg
  • 12 tsp lemon juice
  • 1 c sugar
  • 2 Tbsp flour
  • 2 Tbsp oleo

Directions

  1. Wash and cut rhubarb into small 1-inch pieces
  2. Beat egg add lemon juice sugar and flour
  3. Mix together and pour over chopped rhubarb
  4. Stir until well coated
  5. Pour into unbaked 9-inch pie crust
  6. Dot with oleo
  7. Cover with top crust
  8. Sprinkle with 1 teaspoon sugar and prick holes with fork
  9. Bake at 425 for 10 minutes and then at 350 for 30 minutes or until golden brown
