Rhubarb Ricotta Bread

Ingredients

  • 2 c flour
  • 34 c sugar
  • 1 12 tsp baking powder
  • 1 tsp baking soda
  • 12 tsp salt
  • 6 Tbsp melted margarine
  • 1 c Ricotta cheese
  • 12 c milk
  • 2 eggs
  • 12 tsp almond extract
  • 1 c finely chopped rhubarb
  • 12 c slivered almonds optional
  • confectioners sugar

Directions

  1. In large bowl combine flour sugar baking powder soda and salt
  2. In medium bowl beat together melted margarine Ricotta milk eggs and extract
  3. Add Ricotta mixture to dry ingredients stir just until blended
  4. Fold in rhubarb and nuts
  5. Scoop batter into greased and floured 9 x 5 loaf pan
  6. Bake at 350 about 50 minutes
  7. Cool in pan on wire rack 10 minutes
  8. Remove from pan and cool completely
  9. Sprinkle with confectioners sugar
  10. Store in an air tight container
