Ingredients

  • 1 stick margarine softened
  • 2 12 c powdered sugar
  • 4 eggs
  • 7 34 oz can sweet coconut juice or about 12 14 oz can coconut milk
  • 1 lb box sweet rice flour
  • 7 34 oz water
  • 14 tsp salt
  • 1 tsp vanilla

Directions

  1. Beat margarine and powdered sugar until smooth
  2. Add slowly the eggs coconut juice or milk rice flour water salt and vanilla Grease and flour 13 x 9-inch pan
  3. Bake 40 minutes at 350 until barely light brown
  4. Cool
  5. Sift powdered sugar over if desired
  6. Cut into squares
