Rice Cheesecake

Ingredients

  • 1 c cashews
  • 1 c water
  • 1 c hot cooked brown rice
  • 1 c diced dried pineapple
  • 1 Tbsp water
  • 1 pkg unflavored gelatin
  • 1 c water
  • 1 9-inch graham cracker pie crust or 1 pkg graham cracker crumbs on bottom of pie plate

Directions

  1. Place cashews and 1 cup water in blender blend well then add rice
  2. Soften pineapple and 1 tablespoon water in microwave then add to blender
  3. Add remaining 1 cup water and blend all well Pour mixture into crust slowly and refrigerate
  4. May top with fruit or chocolate
