Rice Cheesecake
Ingredients
- 1 c cashews
- 1 c water
- 1 c hot cooked brown rice
- 1 c diced dried pineapple
- 1 Tbsp water
- 1 pkg unflavored gelatin
- 1 c water
- 1 9-inch graham cracker pie crust or 1 pkg graham cracker crumbs on bottom of pie plate
Directions
- Place cashews and 1 cup water in blender blend well then add rice
- Soften pineapple and 1 tablespoon water in microwave then add to blender
- Add remaining 1 cup water and blend all well Pour mixture into crust slowly and refrigerate
- May top with fruit or chocolate
