Rice Jambalaya

Ingredients
- 1 Tbsp oil
- 1 medium onion chopped
- 1 small green pepper cut into strips
- 1 clove garlic minced
- 2 cans Cajun style stewed tomatoes
- 1 10 oz pkg frozen cut okra
- 12 lb pork cut into thin strips or canned tuna or any meat desired cooked
- 2 c cooked rice
Directions
- Heat oil in skillet
- Add onion green pepper and garlic cook until tender-crisp
- Add tomatoes okra and cooked meat
- Bring to a boil
- Stir in rice
- Cover
- Serve hot
