Rice Jambalaya

Ingredients

  • 1 Tbsp oil
  • 1 medium onion chopped
  • 1 small green pepper cut into strips
  • 1 clove garlic minced
  • 2 cans Cajun style stewed tomatoes
  • 1 10 oz pkg frozen cut okra
  • 12 lb pork cut into thin strips or canned tuna or any meat desired cooked
  • 2 c cooked rice

Directions

  1. Heat oil in skillet
  2. Add onion green pepper and garlic cook until tender-crisp
  3. Add tomatoes okra and cooked meat
  4. Bring to a boil
  5. Stir in rice
  6. Cover
  7. Serve hot
