Rice Lasagna
Ingredients
- 1 lb ground beef or turkey
- 12 c chopped onion
- 1 30 oz jar prepared spaghetti sauce
- 1 15 oz container low-fat part skim Ricotta or cottage cheese
- 2 c 8 oz shredded low-fat part skim Mozzarella cheese
- 2 egg whites
- 3 c cooked long grain rice
- 14 c grated Parmesan cheese
Directions
- Heat oven to 350
- Spray a 9 x 13-inch pan with nonstick cooking spray
- In medium skillet brown beef and onion drain Stir in spaghetti sauce mix well
- In small bowl combine Ricotta cheese Mozzarella cheese and egg whites mix well
- In the prepared pan spread 13 of meat sauce 12 of rice and 12 of Ricotta cheese mixture repeat layers
- Spread remaining sauce on top sprinkle with Parmesan cheese
- Bake at 350 for 30 to 35 minutes or until hot and bubbly
- Let stand for 10 minutes before serving
- Yields 8 servings
