Rice Pilaf

Ingredients
- 1 large onion chopped 1 c
- 1 garlic clove minced
- 14 c butter or margarine
- 2 12 c chicken broth
- 1 c uncooked long grain rice
- 12 c chopped parsley
- 14 c raisins or carrots plumped
- 14 c pine nuts
- 12 tsp salt
- 14 tsp pepper
Directions
- To plump raisins place them in a small bowl pour boiling water over them and let stand 20 minutes
- Drain and pat dry on paper toweling
