Rice Stroganoff
Ingredients
- 2 tsp margarine
- 1 c sliced mushrooms
- 14 c sliced scallions
- 1 garlic clove minced
- 34 c chicken broth
- 14 c dry white table wine
- 1 Tbsp chopped fresh parsley
- 18 tsp salt
- dash of white pepper
- 4 oz uncooked regular long grain rice
- 14 c lite sour cream
Directions
- In
- a 2-quart saucepan melt margarine
- Add mushrooms scallions and
- garlic
- andsaute over medium heat until mushrooms are just tender 1 to 2 minutes
- Add remaining ingredients except rice
- and sour cream and bring mixture to a boil Add rice
- and stir to combine
- Reduce heat to low cover and cook untilliquid is
- absorbed
- and rice is tender 10 to 15 minutes
- Stirin sour cream and serve immediately
