Rice With Artichoke Hearts
Ingredients
- 1 can artichoke hearts drained and chopped
- 2 tsp olive oil
- 14 c chopped mushrooms
- 1 small onion chopped
- 1 clove garlic chopped
- 2 Tbsp fresh basil chopped 34 tsp dried
- 2 whole tomatoes chopped peel if desired
- 2 c chicken broth
- 1 c rice
- 12 c Parmesan cheese
- 1 12 Tbsp margarine
- salt and pepper to taste
Directions
- Heat oil
- Saute mushrooms until their liquid evaporates
- Add onion and saute 2 minutes
- Add garlic basil tomatoes and 12 cup stock
- Bring to boil
- Simmer 10 minutes
