Rice With Artichoke Hearts

Ingredients

  • 1 can artichoke hearts drained and chopped
  • 2 tsp olive oil
  • 14 c chopped mushrooms
  • 1 small onion chopped
  • 1 clove garlic chopped
  • 2 Tbsp fresh basil chopped 34 tsp dried
  • 2 whole tomatoes chopped peel if desired
  • 2 c chicken broth
  • 1 c rice
  • 12 c Parmesan cheese
  • 1 12 Tbsp margarine
  • salt and pepper to taste

Directions

  1. Heat oil
  2. Saute mushrooms until their liquid evaporates
  3. Add onion and saute 2 minutes
  4. Add garlic basil tomatoes and 12 cup stock
  5. Bring to boil
  6. Simmer 10 minutes
