Rice With Black Beans20 Minutes
Ingredients
- 1 Tbsp oil
- 1 medium onion chopped
- 2 cloves garlic minced
- 1 15 oz can black beans rinsed and drained
- 1 14 12 oz can stewed tomatoes
- 23 c water
- 12 tsp dried oregano leaves
- 1 12 c Minute brown rice uncooked
Directions
- Heat oil in large skillet
- Add onion and garlic cook and stir until tender but not browned
- Stir in beans tomatoes water and oregano
- Bring to boil
- Stir in rice
- Return to boil Reduce heat to low cover and simmer for 5 minutes
- Remove from heat
- Let stand for 5 minutes
- Makes 4 servings
- Recipe can be doubled
