Rice With Green PeasServings  8

Ingredients

  • 2 c frozen peas thawed and drained
  • 3 c rice
  • 3 13 c water
  • 2 to 3 tsp salt
  • 1 12 Tbsp sake or white wine

Directions

  1. Knead and rinse the rice
  2. Place the rice and water in a heavy medium size saucepan and leave it for half an hour
  3. Add salt and sake
  4. Place the saucepan with a tight fitting lid on low heat for 1 to 2 minutes
  5. Keep it covered until done
  6. Heat over high heat for 9 to 10 minutes
  7. Then for 5 to 6 minutes over medium heat Continue cooking over low heat for another 5 to 6 minutes Finally increase heat to high and cook only for 20 seconds
  8. Stop the fire and mix the prepared peas very quickly
  9. Cover rice with a paper towel replacing the lid immediately
  10. Let stand for 10 minutes
  11. Do not lift lid while rice is cooking
