Rich Cocoa Fudge

Ingredients

  • 3 c sugar
  • 23 c Hersheys cocoa
  • 18 tsp salt
  • 1 12 c milk
  • 12 stick margarine
  • 1 tsp vanilla
  • 1 c pecans chopped

Directions

  1. Butter an 8 or 9-inch square pan with foil set aside
  2. In heavy 4-quart saucepan stir together the sugar cocoa and salt Stir in milk
  3. Cook over medium heat stirring constantly until mixture comes to full rolling boil
  4. Boil without stirring to 234 or until syrup forms soft ball stage
  5. Remove from heat
  6. Add butter and vanilla
  7. Do not stir
  8. Cool at room temperature to 110 lukewarm
  9. Beat with wooden spoon until fudge loses its gloss
  10. Spread in pan
  11. Cool cut into squares
