Rich Lemon Bars
Ingredients
- 1 12 c plus 3 Tbsp unsifted flour
- 34 c cold margarine or butter
- 1 12 c granulated sugar
- 12 c ReaLemon juice from concentrate
- 12 c confectioners sugar
- 4 eggs slightly beaten
- 1 tsp baking powder
- additional confectioners sugar
Directions
- Preheat oven to 350
- In a medium bowl combine 1 12 cups flour and 12 cup confectioners sugar
- Cut in margarine until crumbly
- Press into bottom of lightly greased 13 x 9-inch baking pan
- Bake 15 minutes
- Meanwhile in a large bowl combine eggs granulated sugar baking powder ReaLemon and remaining 3 tablespoons flour
- Mix well
- Pour over baked crust for 20 to 25 minutes until lightly browned
- Cool
- Cut into bars
- Sprinkle with additional confectioners sugar
- Store covered in refrigerator
