Ricotta Pie
Ingredients
- 3 c Ricotta cheese
- 14 c all-purpose flour
- 2 Tbsp grated orange peel
- 2 Tbsp grated lemon peel
- 1 Tbsp vanilla
- pinch of salt
- 4 eggs
- 1 c sugar
- unbaked 9-inch pie shell
Directions
- Combine together the first 6 ingredients set aside
- Beat the eggs until foamy add the 1 cup sugar
- Stir into the Ricotta mixture until well blended and smooth
- Pour into an unbaked pie shell
- Bake at 350 for 50 to 60 minutes or until mixture is firm and pastry is golden brown
- Remove from oven and place on cooling rack until cool
- Keep refrigerated
- Eat and enjoy
