Ricotta Pie

Ingredients

  • 3 c Ricotta cheese
  • 14 c all-purpose flour
  • 2 Tbsp grated orange peel
  • 2 Tbsp grated lemon peel
  • 1 Tbsp vanilla
  • pinch of salt
  • 4 eggs
  • 1 c sugar
  • unbaked 9-inch pie shell

Directions

  1. Combine together the first 6 ingredients set aside
  2. Beat the eggs until foamy add the 1 cup sugar
  3. Stir into the Ricotta mixture until well blended and smooth
  4. Pour into an unbaked pie shell
  5. Bake at 350 for 50 to 60 minutes or until mixture is firm and pastry is golden brown
  6. Remove from oven and place on cooling rack until cool
  7. Keep refrigerated
  8. Eat and enjoy
