Ingredients

  • 14 c vegetable oil
  • 1 medium onion chopped
  • 1 clove garlic quartered
  • 1 medium carrot chopped
  • 1 small celery stalk chopped
  • 4 sprigs fresh parsley chopped or 1 tsp dry parsley
  • pinch of oregano
  • 6 leaves fresh basil chopped or 12 tsp dry basil
  • 1 lb ground beef
  • 13 c dry red wine
  • 1 can 28 oz Italian type tomatoes
  • salt and pepper to taste
  • 12 c grated Parmesan cheese
  • 1 lb rigatoni

Directions

  1. In large saucepan heat oil Saute onion garlic carrot and celery until golden brown Add parsley oregano basil and meat Stir and cook until meat is brown Add wine and let evaporate quickly Add tomatoes salt and pepper simmer about 12 hour Prepare rigatoni as package directs Drain Pour in warm bowl Add sauce and parmesan cheese Toss to mix
